Turkey Muffins - Paleo Friendly

I made these last night as an experiment for breakfast. They turned out REALLY good. Of my 12 muffins, there are only four left....for the week. Looks like I will be making more tomorrow :)
To make:
1 pkg ground turkey     1/2 onion
2c spinach                       1 egg
1 yellow pepper             6 slices bacon (12 halves)
2 tsp rubbed sage
Dice the yellow pepper and onion. Add to turkey, spinach and egg. Mix together until it appears all ingredients appear well blended. Add one 1/2 slice bacon to each muffin cup in a muffin pan. Divide mixture into equal parts to fill muffin cups. Wrap bacon around mixture. Bake at 375° for 45 - 60 minutes. Salt and pepper can be added to taste, as well as garlic or any other seasoning. This recipe was really good as is!
