Slow cook pork loin in crock pot, with liquid smoke, and Chipotle seasoning added. Fill romaine lettuce leaves with cooked pork, Pico de galo and avocado. Add a side of broccoli salad with vinegar based or Whole 30 dressing.
I found some Chipotle Chili Pepper Salsa and added to the pork this morning. Once cooked all day, shred the pork and add more salsa for about an hour before serving.
