With Autumn just around the corner & all the buzz about the infamous Pumpkin Spice Latte, I decided to try and make my own fall-like concoction. It turned out good! 1 1/2c Unsweetened coconut milk (beverage) 8oz Organic solid packed pumpkin 1/3 c Lite coconut milk (thicker, in a can) 2 c Ice 1/2 tsp pumpkin pie spice, 1/4 tsp ground cloves, 1/4 tsp cinnamon (all spices to preferred taste) 1/2 c Erythritol 2 scoops vanilla or sugar cookie 100% whey protein 2-3 tsps instant coffee
Blend the coconut milk beverage, pumpkin and thick coconut milk until creamy. Add ice. Blend until smooth. Add spices, erythritol and whey protein. Blend until smooth. Add instant coffee, blend until done. Enjoy!
