My husband has been craving lasagna the past couple of days, which is why it has been added to the menu for the week. This recipe is one we have prepared before, but I am experimenting a little. Simply slice zucchini long-ways and prepare the meat sauce as needed for a traditional lasagna. Add Silver Palate brand sauce to 1 lb. ground beef, as it has no added sugars. The twist will be the “cheese” I am going to add to it. I am going to prepare 1 c coconut milk, with 1 egg, ½ c Tuscan infused olive oil, garlic and onion powders, and parsley, to layer in with the sauce. Bake at 400° for 25 – 30 minutes.
Hopefully it will turn out. If not, we have leftover pork from last night
The finished product AH-MAZING. I ended up adding three garlic cloves to the meat sauce, and one to the "cheese" sauce. I also added some pink Himalayan salt, to bring out the flavors.
