Turn your crock pot on to low. Place 1/2 of sliced onion and two peppers in bottom of pot. Add chicken breasts. Squeeze 1 to 2 limes on top of meat. Layer remaining onion and pepper on top. Mix together seasonings, add 1/2 c water to mixture. Pour over everything in the crock pot. Cover and let cook all day.
Before serving, chicken can be shredded and all ingredients mixed. Then serve on top of a bed of spinach and top with guacamole, salsa, squeeze of lime and dump ranch.
This dinner is super easy, especially when pressed for time. If you can squeeze in 15 minutes in the morning, all you'll have to do is add your toppings and you'll be ready to eat in no time!
