Tonight is a game night, so last night I threw together a chicken curry in the crock pot and it has been cooking all day. What you'll need:
2 c Coconut milk (beverage)
1 can coconut milk (full fat)
2 Tbs curry seasoning
1 Tbs Tumeric
2 Tbs Clarified butter/ghee
2 - 3 lbs chicken breast
Melt ghee, add onions and salt, saute until onions are clear. Add coconut milk (beverage). Add curry and Tumeric stir well. Set to low heat and add canned coconut milk. Salt as desired.
Once sauce begins to bubble, prepare crock pot. Add sauce to cover bottom of crock pot. Layer chicken and sauce.
Add in desired veggies. Organic cauliflower and carrots are used here. Pour remainder of sauce on top. Set crock pot to low and cook for 12+ hours.
