Fried Plantains

We tried plantains for the first time. They accompanied the Crock Pot Chicken Fajitas we had for dinner. They were different, but good. I think we expected them to be sweeter than they were. Regardless, we found a carb source we can add to our menu, to support muscle growth, which is good!

Melt 1 Tbs ghee in a pan. Slice one plantain into pan. Sprinkle cinnamon and almond slivers, cover and fry on medium heat until done.

I imagine raisins, vanilla, coconut and coconut milk could be added to make for a dessert like skillet.

Fried Pears With Pecans

This was a dessert following a special dinner made for my husband, and he really liked it. Don't worry, it is Whole 30 and flavorful.

In a pan melt 1 Tbs ghee. Quarter one pear and add, flesh down, to pan. Set to medium, cover and allow to fry for about 5 minutes. Flip to skin side (should have a bit of browning), and sprinkle desired amount of pecans on top. Then add cinnamon and drizzle 2 Tbs coconut milk on top. Cover, remove from heat, serve after allowing to sit for 10 - 15 minutes.

Make sure to serve with spoons, you'll want all the goodies in every bite!

Eggs With Prosciutto

What you'll need:

​2 boiled eggs
2 slices prosciutto
1 tsp dump ranch (Whole Sisters recipe)
1/2 breakfast tortilla (Stupid Easy Paleo recipe)
1 tsp approved jam

Combine as shown, or however you would like to eat it :)

Salsa Spinach Egg Casserole

Preheat oven to 375°
What you'll need:
6 eggs
1/2 c liquid egg whites
1 c salsa
1/2 c coconut milk
2 c spinach, chopped

Combine eggs, egg whites, salsa and coconut milk with a blender. Using ghee, "butter" a baking dish. Pour mixed ingredients into dish, add spinach.

Feel free to add other veggies like olives (seen here), peppers, onions and so on.

Bake for 30 minutes or until no longer liquid.

Almond Banana Bread

Cream together:

3 eggs
1 tsp vanilla
2 cut bananas
1/4 c coconut oil
1/2 c powdered, crushed, dried dates (date "sugar")

Combine dry ingredients:

1 1/2 c almond flour
2 Tbs coconut flour
1 tsp baking soda
1/2 tsp baking powder
A bit of salt

Combine creamed and dry ingredients. Bake at 350 for 40 minutes. Let cool and enjoy.

Banana Clafouti

6 ggs
1 cup coconut milk
2 tbs. Ghee
pinch of salt
1 tsp. vanilla
1.5 tsp. cinnamon
2 very ripe bananas

Preheat oven to 400. Grease pan. Beat eggs in a large bowl with electric mixer. Add in coconut milk, melted butter, salt, vanilla and cinnamon.

Pour egg mixture into prepared pan; scatter bananas throughout and bake for 40 minutes or until set. The clafouti will puff up in the oven and then sink once it starts to cool.

The family LOVED this one!

Blueberry Clafoutis

I made this in an attempt to find more breakfast options for my kiddos. It is called Blueberry Clafouti...So good.

6 ggs
1 cup coconut milk
2 tbs. Ghee
pinch of salt
1 tsp. vanilla
1.5 tsp. cinnamon
1.5 cup blueberries

Preheat oven to 400. Grease pan. Beat eggs in a large bowl with electric mixer. Add in coconut milk, melted butter, salt, vanilla and cinnamon.

Pour egg mixture into prepared pan; scatter blueberries throughout and bake for 40 minutes or until set. The clafouti will puff up in the oven and then sink once it starts to cool.

I am definitely going to play around with other fruits an probably pumpkin. It ended up being dessert for us tonight.
